Ingredients
Indian Spiced Lamb Burgers
- For the Burgers:
- 1 lb ground lamb
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated on a Microplane
- 4 tablespoons yellow onions, minced
- 2 tablespoons fresh mint, leaves, chopped
- 2 tablespoons fresh cilantro, leaves, chopped
- 2 tablespoons fresh basil, leaves, chopped
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon cumin
- ½ teaspoon cayenne
- ½ teaspoon nutmeg
- Pinch cloves
- Kosher salt, to taste
- For the Assembly:
- 2 brioche buns, split
- 4 tablespoon clarified or melted unsalted butter, warmed
- Yogurt Sauce, recipe follows
- Onion Chutney, recipe follows
Onion Chutney
- 1 yellow onion, minced
- 1 tablespoon tomato paste
- 2 tablespoons ketchup
- 1 teaspoon Indian chili powder
- ½ teaspoon cayenne pepper
- ½ teaspoon turmeric
- 1-2 tablespoons methi leaves, dried (leaves of fenugreek plant dried)
- ¼ teaspoon cumin, ground
- 1 lemon, zest and juice
- Kosher salt, to taste
Yogurt Sauce
- 1 teaspoon cumin seeds, whole
- 1 cup full-fat Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon cilantro, chopped
- Kosher salt, to taste
Steps
Indian Spiced Lamb Burgers
- Combine all ingredients and mix together well.
- Form into two 8-ounce patties. Cook over high heat on a grill until medium, about 4 minutes per side.
- Brush buns with butter and then toast cut side down in a non-stick skillet or on a flat grill plate until golden brown.
- Place cooked burger on the bottom half of the bun and top with a couple of spoonfuls of the Yogurt Sauce.
- Place a large dollop of the Onion Chutney on top of the yogurt and top with the top bun. Serve with Quick Pickles and Black Salt Potato Chips on the side.
Onion Chutney
- Combine all ingredients and adjust seasoning if needed. Set aside to macerate for at least 30 minutes prior to using.
Yogurt Sauce
- Toast cumin seeds and crush them in a mortar and pestle. Add them to a bowl with the remaining ingredients. Taste and adjust seasoning if needed.
