- 2 Persian cucumbers, thinly sliced on mandoline
- ½ cup cider vinegar
- ½ cup sugar
- 2 teaspoons cumin seeds, whole
- Kosher salt
- In a small bowl, toss cucumbers lightly in salt. Combine sugar, vinegar, and cumin seeds in a small saucepot and bring to a boil. Pour hot liquid over cucumbers and allow to sit for at least 30 minutes.
