Ingredients

Spicy Deviled Eggs

  • 15 eggs
  • 2 teaspoons Dijon mustard
  • ½ cup Spicy Mayonnaise, recipe follows
  • ½ tablespoon champagne vinegar
  • 1 teaspoon chives, minced
  • 1 teaspoon chervil, minced
  • 1 teaspoon tarragon, minced
  • ½ teaspoon cayenne pepper
  • paprika, for garnish
  • chives, minced, for garnish

Spicy Mayonnaise

  • 1 cup mayonnaise
  • 2 cloves garlic, roasted
  • 1 clove garlic, raw
  • 1 teaspoon cayenne
  • hot sauce, to taste
  • kosher salt, to taste
  • black pepper, to taste

Steps

Spicy Deviled Eggs

  1. For the eggs: Add eggs to pot and fill with water to cover and place over high heat. Bring to a boil and turn off heat. Let eggs sit for 10 minutes.
  2. Drain and peel the eggs and let them cool.
  3. Slice eggs in half lengthwise.
  4. Remove yolks and reserve for the Filling. You only need 12 whole egg whites (24 halves), and will have 3 whole egg whites (6 halves) left to snack on or use in another recipe.
  5. Add egg yolks, spicy mayonnaise, champagne vinegar, chives, chervil, tarragon, and cayenne to a food processor and blend until smooth. Transfer to a piping bag.
  6. Pipe deviled egg filling into the egg white halves. Dust with paprika and garnish with minced chives.

Spicy Mayonnaise

  1. Combine all and season to taste with salt, pepper and hot sauce.
