Ingredients

  • Asparagus
  • 1 lb medium-size asparagus
  • 2 tablespoons canola oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • Black Bean Sauce
  • 2 tablespoons canola oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon chili flakes
  • 2 tablespoons black bean sauce
  • 1 tablespoon light soy sauce
  • 2 tablespoons water
  • 1 orange, zested and juiced (zest reserved for serving)
  • Fried Eggs
  • 4 tablespoons canola oil
  • 2 large eggs
  • Kosher salt, to taste
  • Black pepper, to taste

Steps

  1. Preheat the grill on high heat. Clean the asparagus, and cut off the tough ends, but keep them whole. Place the asparagus in a large bowl, dress with the canola oil and season with salt and pepper.
  2. To make the sauce, in a 9-inch sauté pan, heat up the canola oil over medium heat. Add the garlic and chili flakes, and cook for 1 minute. Add the black bean sauce, light soy sauce and fresh orange juice, followed by the water. When it comes to a simmer, cook for 30 seconds and the sauce is ready.
  3. Grill the asparagus for about 3 minutes, until cooked but still a little crunchy.
  4. For the eggs, heat a cast-iron pan over high heat for 2 minutes and then add the canola oil. When the oil is smoking hot, crack the eggs into the pan. The egg whites will immediately bubble up and become golden and crispy. Fry for 30 seconds until they become crispy sunny-side up eggs. Season with salt and pepper.
  5. Place the black bean sauce down on a large plate and lay the grilled asparagus on top. Put both eggs on the asparagus, and finish the dish with some freshly grated orange zest.
