Ingredients

Baked Then Fried Chicken

  • 2 ea chicken thighs, legs and wings, bone-in, skin on
  • Chicken Seasoning Mix, recipes follows
  • canola or vegetable oil, for frying
  • Ranch Hot Sauce, recipe follows

Chicken Seasoning Mix

  • 2 1/2 cups all purpose flour
  • 2 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 2 teaspoons cayenne powder
  • 1/2 tablespoon black pepper
  • 1 tablespoons paprika
  • 1 tablespoons smoked paprika
  • 1/4 cup old bay seasoning
  • 1/2 teaspoon ground cumin

Ranch Hot Sauce

  • 1 cup Greek yogurt
  • 1 cup buttermilk
  • 2 teaspoons fresh parsley leaves, minced
  • 2 teaspoons fresh chives, minced
  • 1 teaspoon fresh chervil, minced
  • 1 teaspoon fresh tarragon, minced
  • 2 teaspoons serrano peppers, seeded and minced
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 tablespoon lemon juice
  • Kosher salt, to taste
  • hot sauce, to taste

Steps

Baked Then Fried Chicken

  1. Coat chicken very well in chicken seasoning and tap off any excess.
  2. Place all the chicken pieces on a sheet tray fitted with a baking rack.
  3. Bake at 250°F until barely cooked, about 35 to 45 minutes.
  4. Let rest for 5-10 minutes at room temp and up to overnight (in the refrigerator).
  5. Add 2-3 inches of frying oil to a cast iron pan or heavy bottom pot and heat to 350°F.
  6. Add the chicken and fry until fully cooked and crispy, about 2 minutes per side (if rested 5-10 min) or 4-5 minutes per side (if rested overnight). Transfer to a paper towel lined plate.
  7. Serve with Ranch Hot Sauce.

Chicken Seasoning Mix

  1. Mix all ingredients well in a bowl.

Ranch Hot Sauce

  1. Combine all ingredients well. Season with salt and hot sauce to taste.
