Ingredients

Roasted Avocado with Green Garlic Mole Verde

  • 1 Haas avocado
  • Kosher salt, to taste
  • extra virgin olive oil, to taste
  • 1 cup arugula
  • 1 lemon, juiced, divided
  • Green Garlic Mole Verde, recipe follows
  • 1 tablespoon pumpkin seeds, toasted, for garnish

Green Garlic Mole Verde

  • 1 cup pepitas, toasted
  • 3 serranos
  • 8 stalks green garlic
  • 4 cloves garlic, peeled
  • 2 tomatillos
  • ½ cup lemon juice
  • 1 bunch cilantro, leaves and stems
  • Kosher salt, to taste

Steps

Roasted Avocado with Green Garlic Mole Verde

  1. Preheat the oven to 350F degrees. Heat a cast-iron pan on the stove over medium-high heat.
  2. Split the avocado in half and deseed. Season the avocado with salt.
  3. Drizzle with olive oil and sear the avocado cut side down on the cast iron pan, 1 minute.
  4. Finish in the oven for 3 minutes or until you get a nice char.
  5. Remove avocado from the oven and place on a tray with a napkin to absorb any oil. Spoon out the avocado.
  6. Toss the arugula in olive oil, juice of half a lemon, and salt.
  7. Spread the Green Garlic Mole Verde on the bottom of the dish.
  8. Place the grilled avocado halves on top of the sauce and drizzle with lemon juice, olive oil, and salt.
  9. Top the avocado with the arugula salad and garnish with toasted pumpkin seeds.

Green Garlic Mole Verde

  1. Preheat oven to 450F. Cut serranos in half and remove seeds.
  2. Heat a large grill pan, griddle or cast iron pan over medium-high heat.
  3. Add serranos, green garlic, garlic cloves, and tomatillos and cook until each is charred. This will take about 2 - 4 minutes.
  4. Remove to a sheet tray and place in oven to cook until soft, about 6 - 8 minutes.
  5. Remove from oven.
  6. Add all ingredients to a blender and puree until smooth. Season with salt.
