Slow Roasted Crispy Pork Belly with Drunken Soju BBQ Sauce

  • For the Pork Belly:
  • 2 Pounds Pork Belly Skin On
  • 1 ½ Tablespoons Shaoxing Wine
  • 1 Teaspoon Chinese Five Spice Powder
  • ¾ Teaspoons Kosher Salt
  • ½ Teaspoon Coarse Ground Black Pepper
  • 1 Tablespoons Datu Puti Spiced Vinegar (can substitute with Unseasoned Rice Wine Vinegar)
  • 7 ounces Rock Salt
  • 12 Ohba Shiso Leaf (Perilla leaf)
  • For the Soju BBQ Sauce:
  • 3 cup Shoyu
  • 3 cup Brown Sugar
  • 1 cup Soju
  • 1/2 cup Gochujang
  • 1/2 cup Honey
  • 1/3 cup Rice Wine Vinegar
  • 15 Cloves Garlic (minced)
  • 1/4 cup Ginger (minced)
  • 4 Scallions (chopped)
  • 1 Asian Pear (peeled, large dice)
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Korean Chili Pepper


  1. For the Pork Belly:
  2. Using a sharp carving fork, pierce as many holes in the skin as possible, avoiding piercing the fat and make sure you do not pierce the flesh. Turn pork belly upside down. Rub flesh with cooking wine. Sprinkle over five spice powder, salt and pepper. Rub all over flesh, including sides (not on skin). Turn skin side up and place in a container. Dab skin dry with paper towels. Refrigerate uncovered for 12 hours, no more than 24 but no less than 3. Pre heat oven to 350F. Remove pork from fridge. Place onto a large sheet of foil. Fold up sides of foil around the pork to enclose it snugly with a rim to help salt stay in. Brush skin with vinegar and place on sheet pan. Brush skin with vinegar and sprinkle rock salt on skin. Roast for 1hr. Switch oven broiler on medium high keeping pork 10in away from heat source. Fold down foil and scrape off rock salt remaining. Broil for approx 23mins, rotating tray once. Once done, allow to rest uncovered for 5-10 minutes before slicing into ¼” slices. Serve shingled with a drizzle of Drunken Soju BBQ Sauce and Ohba Shiso leafs.
  3. For the Soju BBQ Sauce:
  4. Combine all ingredients and simmer for 8mins. Once all items are cooked through, blend on high in blender until smooth.
