- 2 Romaine lettuce hearts
- ¼ cup watermelon, chopped into ¼ inch squares
- ½ cup parmesan cheese, grated
- 2 tablespoons fresh mint, chopped
- 3 tablespoons coarse ground black pepper
- Caesar dressing, to taste
- Chop two lettuce hearts on diagonal angle into 1/2inch pieces. Place into a large mixing bowl. Add the parmesan, mint, coarse pepper and dressing and toss. Top with watermelon, lightly mix with wooden spoon.
