  • 2 oz gin
  • 1 oz meyer lemon juice (or half lemon juice, half tangerine juice)
  • 3/4 oz simple syrup
  • 1 egg white
  • club soda


  1. Add gin, lemon juice, simple syrup, and egg white to a cocktail shaker.
  2. Shake vigorously; about 30 seconds. This helps the egg white to whip up.
  3. Fill the shaker with ice and shake again.
  4. Pour the cocktail through a small fine mesh strainer into a coupe glass.
  5. Top with club soda and serve.
