Ingredients

Chicken Thighs

  • 4 boneless skinless chicken thighs
  • 3/4 cup olive oil, divided
  • 1/2 serrano, minced
  • 1/2 tablespoon chili flakes
  • 1 limes, zest
  • 1 1/2 tablespoons kosher salt
  • 1/2 tablespoon ground black pepper
  • Yogurt Rice, recipe follows
  • Coconut Cilantro Broth, recipe follows
  • 1/4 cup cilantro, chopped
  • 1 bunch scallions, sliced

Yogurt Rice

  • 2 cup jasmine rice
  • 1 cup goat milk yogurt
  • 1 tablespoon chili flakes
  • kosher salt, to taste

Coconut Cilantro Broth

  • 2 cans coconut milk
  • 1 bunch cilantro, leaves and tender stems
  • 1 serrano, chopped
  • kosher salt, to taste

Steps

Chicken Thighs

  1. Put all the chicken thighs in a bowl and toss in 1/2 cup olive oil, serrano, chili flakes, lime zest and salt and pepper.
  2. Let sit in seasoning for at least 30 minutes.
  3. Heat 1/4 cup olive oil in a cast iron skillet until it is starting to smoke. Sear the chicken thighs on one side until golden brown then turn over and cook for approximately 1 more minute.
  4. Turn off the heat and let the thighs sit in the hot pan to continue to cook.
  5. When cooked through, slice thighs into pieces.
  6. Assembly: Add rice to bowl and pour the hot broth over the top. Add chicken and garnish with cilantro and scallion.

Yogurt Rice

  1. Cook rice in a rice cooker or on stove stop, and allow to cool by spreading on a sheet tray.
  2. Add yogurt and chili flakes to a bowl and once the rice has cooled, add it to the bowl with yogurt.
  3. Fold to mix and coat the rice thoroughly with the mixture.
  4. Season with salt to taste and set aside.

Coconut Cilantro Broth

  1. Add coconut milk, cilantro (leaves and stems), serrano, and salt to the blender.
  2. Start on a low speed and slowly increase the speed to help everything incorporate evenly.
  3. Add the mix to a pot and heat gently to warm.
