Ingredients

  • 3 cups snap peas, blanched and shocked
  • 3 cups snow peas, blanched and shocked
  • 4 tablespoons scallions, sliced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 cup mint, picked, reserve a small amount for garnish
  • 1/4 cup parsley, minced, reserve a small amount for garnish
  • 1/4 cup crème fraiche, reserve a small amount for garnish
  • Maldon salt, to taste
  • coarse cracked black pepper, to taste

Steps

  1. Combine snap peas through creme fraiche and fold together until well mixed and coated. Garnish with the reserved mint and parsley, creme fraiche, maldon salt and freshly cracked pepper.
