  • 608g AP four, plus more for kneading
  • 67g sugar
  • 12g milk powder
  • 5g instant yeast
  • 8g sea salt
  • 375ml warm water
  • 30g vegetable or canola oil
  • panko breadcrumbs
  • salted butter, for serving


  1. Preheat the oven to 400F.
  2. In a mixing bowl, mix flour, sugar, milk powder, instant yeast and salt.
  3. Add water and mix just until combined. Then add the oil and mix until just incorporated. The dough will look shaggy.
  4. Let it rest for 30 minutes, covered, in a dry, warm place.
  5. Flour a work surface and knead until smooth. Be sure to keep hands moist with oil or water to prevent the dough from sticking too much.
  6. Using a knife or a bench scraper, cut the dough into quarters.
  7. Roll each quarter into a log (about 6-inches long), coat with breadcrumbs, and let rest for 15 minutes.
  8. Portion dough to 1 inch thick pieces and space them 1 inch apart on a parchment lined baking sheet.
  9. Bake at 400F for 15 minutes. Then reduce the oven temp to 350F and bake them for another 10 minutes.
  10. Serve warm with salted butter.
