Homemade Gnocchi

  • 3 large baked potatoes
  • 1 egg
  • 1/2 cup ricotta cheese
  • 1 teaspoon of fresh grated nutmeg
  • ¼ cup parmesan cheese
  • 1 tablespoon butter
  • 2 1/2 cups of flour (+ extra for kneading)
  • 1-2 teaspoon salt
  • Salted water for boiling the gnocchi
  • 1-2 tablespoons butter, for finishing
  • 1-2 cloves garlic, smashed, for finishing
  • 1 sprig fresh rosemary, for finishing


  1. Bring heavily salted water to a boil.
  2. Remove the insides from the baked potatoes and mash in a bowl with egg, ricotta cheese, nutmeg, parmesan and butter and salt.
  3. Add in flour little by little until the dough begins to form, then transfer to a floured surface and gently fold the dough into a ball. The dough should be fluffier, like biscuit dough rather than pizza dough.
  4. Separate the dough into quarters, and roll each piece into long ½ inch tubes.
  5. Cut into 1 inch pieces, then lightly press the top with a fork to create ridges.
  6. Drop pieces into the boiling water and cook until they float, about 1 minute.
  7. Remove, then cook in butter, garlic and rosemary until gnocchi are browned on both sides before tossing in the Vodka Sauce.
