Ingredients

Sesame and Soy Marinated Churrasco Steak with Chimichurri

  • 3-4 lbs of outside skirt steak
  • 2 tablespoons sesame oil
  • ⅓ cup soy sauce
  • ¼ cup orange juice
  • 1 tablespoon maple syrup
  • ½ yellow onion, sliced
  • kosher salt and freshly ground black pepper, to taste
  • Chimichurri, for serving, recipe below

Chimichurri

  • ½ cup parsley leaves, finely chopped
  • ½ cup oregano leaves, finely chopped
  • 1 teaspoon dried oregano
  • ½ cup shallots, chopped
  • 3 garlic cloves, minced
  • 1-2 tablespoons red chilies, deseeded and finely chopped
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • Kosher salt and freshly ground black pepper, to taste

Steps

Sesame and Soy Marinated Churrasco Steak with Chimichurri

  1. Place steak into a zip top bag, and add sesame oil, soy sauce, orange juice, maple syrup and onion into the bag.
  2. Squeeze out all of the air from the bag, and marinate in the fridge 2-4 hours or overnight.
  3. Heat a cast iron to high heat, until it begins to smoke.
  4. Season the steak with salt and pepper, then cook on one side for 2 minutes, until it develops a charred crust, then flip and cook on the other side for another 2 minutes.
  5. Flip again, and cook on both sides for another minute.
  6. By now the steak should be close to medium, so remove and let it rest for 10 minutes.
  7. Once it’s rested, cut the steak in half, then flip the steak vertical, and cut on a bias against the grain.
  8. Serve with chimichurri spooned over the top.

Chimichurri

  1. Add parsley, oregano (dry and fresh), shallots, garlic and chilies to the bowl, then mix in the red wine and oil.
  2. Season with salt and pepper to your desired taste.
