Ingredients

  • 1 lb. Mochiko (or sweet rice flour)
  • ½ cup gluten free flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 eggs
  • ½ teaspoon salt, Himalayan
  • 2 teaspoons vanilla extract
  • 2 ½ cups almond milk
  • 2 oz vegan butter, melted
  • ¼ cup grapeseed oil
  • 1 can 18oz. sweetened red bean paste
  • cooking spray, for spraying pan
  • Dairy free vanilla ice cream, for serving

Steps

  1. Preheat the oven to 350F.
  2. Mix all the dry ingredients in a large bowl. Add wet ingredients and red bean paste and whisk until thoroughly combined.
  3. Pour into a greased 9x13” pan.
  4. Bake for about 45 minutes.
  5. Cool completely before cutting into squares.
  6. Serve with dairy free vanilla ice cream.
