Ingredients
Grilled Pork Longganisa
- 1 3/4 lbs ground pork
- 1/2 lb pork back fat
- 1 tablespoon garlic, minced
- 1 tablespoon kosher salt
- ½ teaspoon pink salt
- 1 tablespoon sugar
- 1 teaspoon black pepper
- 1 tablespoon soy sauce
- ¼ cup white vinegar
- 2 bay leaves, crushed
- 1 teaspoon oregano
- 2 eggs, beaten
- vegetable or canola oil, for grill
Cracked Pepper Vinegar
- 1 cup coconut vinegar
- 6 garlic cloves, crushed and peeled and roughly chopped
- 1 piece (½ inch) fresh ginger, smashed
- ¼ cup Thai chiles, sliced
- 1 ½ teaspoons cracked black pepper
Steps
Grilled Pork Longganisa
- In a mixing bowl, mix all ingredients together. Let sit for 4 hours.
- Using the bamboo skewers, skewer the meat, 1/4 cup per stick. Shape however you like.
- Oil the grates of a gas or charcoal grill, or if cooking on a stove, a grill pan, and preheat over medium.
- Grill over medium heat, 3-4 minutes per side.
- Serve with Cracked Pepper Vinegar.
Cracked Pepper Vinegar
- Combine the vinegar, garlic, ginger, chiles, and pepper in a small bowl. Stir well and serve.
