Ingredients

Italian Chopped Salad

  • 6 slices salami
  • 4 slices mortadella
  • ⅓ cup provolone cheese, cut into cubes
  • ½ cup cooked garbanzo beans
  • ⅓ cup cherry tomatoes, halved
  • ½ cup baby gem lettuce, chopped
  • ½ cup radicchio, chopped
  • ⅓ cup fennel, shaved
  • Dressing (see recipe)
  • ⅓ cup fresh oregano

Dressing

  • ¼ cup red wine vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon dijon mustard
  • 2 tablespoons dried oregano
  • 1 teaspoon calabrian chili, minced
  • 1 ½ cup olive oil
  • kosher salt, to taste
  • black pepper, to taste

Steps

Italian Chopped Salad

  1. Cut the salami and mortadella into 3-inch strips.
  2. Toss all the ingredients in a bowl.
  3. Add the dressing. Toss to coat.
  4. Plate in a salad bowl and finish with fresh oregano.

Dressing

  1. Add the vinegar, garlic, mustard, oregano and calabrian chili to a bowl and mix.
  2. Slowly stream in the olive oil and whisk to emulsify into a dressing.
  3. Season with salt and pepper.
