Italian Chopped Salad
- 6 slices salami
- 4 slices mortadella
- ⅓ cup provolone cheese, cut into cubes
- ½ cup cooked garbanzo beans
- ⅓ cup cherry tomatoes, halved
- ½ cup baby gem lettuce, chopped
- ½ cup radicchio, chopped
- ⅓ cup fennel, shaved
- Dressing (see recipe)
- ⅓ cup fresh oregano
Dressing
- ¼ cup red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon dijon mustard
- 2 tablespoons dried oregano
- 1 teaspoon calabrian chili, minced
- 1 ½ cup olive oil
- kosher salt, to taste
- black pepper, to taste
Steps
Italian Chopped Salad
- Cut the salami and mortadella into 3-inch strips.
- Toss all the ingredients in a bowl.
- Add the dressing. Toss to coat.
- Plate in a salad bowl and finish with fresh oregano.
Dressing
- Add the vinegar, garlic, mustard, oregano and calabrian chili to a bowl and mix.
- Slowly stream in the olive oil and whisk to emulsify into a dressing.
- Season with salt and pepper.
