Walnut Brownies

  • ¾ cup (170g) unsalted butter, cubed
  • 1¼ cup (188g) semi-sweet chocolate chips, divided
  • 1 cup (200g) granulated sugar
  • ¾ cup (75g) cocoa powder
  • 2 teaspoons (10g) instant espresso powder
  • 3 eggs, room temperature
  • ½ teaspoon (3g) vanilla
  • ¾ cup (90g) all-purpose flour
  • ½ teaspoon (2g) kosher salt
  • 1 cup (150g) chopped walnuts, divided


  1. Heat oven to 350F (176C).
  2. Line a 9-inch (23cm) square baking pan with parchment paper; set aside.
  3. Melt together butter, ¾ cup (125g) chocolate chips, sugar, cocoa powder and espresso powder in a large heat-proof bowl over a pot of simmering water, stirring occasionally until smooth.
  4. Remove from heat and set aside to cool for 10 minutes.
  5. Stir in eggs one at a time, just to combine.
  6. Stir in vanilla. Add flour, salt, ¾ cup (112g) chopped walnuts and remaining chocolate chips.
  7. Pour batter into the prepared baking pan; spread evenly to edge of pan. Scatter with remaining walnuts.
  8. Bake just until firm, 20 to 25 minutes.
  9. Cool completely before cutting to serve.
