Ingredients

Tiger Prawns

  • Raw medium sized prawns
  • 1 lime juiced
  • Salt
  • Black pepper
  • 1 tablespoon of olive oil

Plantains

  • 4 to 6 ripe but firm plantain (substitutes: sweet potato/yam/potato)
  • Vegetable oil

Kale

  • 1 bunch raw kale
  • Quarter onion
  • Quarter teaspoon cayenne pepper
  • 2 tablespoons powdered crayfish

To Assemble

  • Tiger Prawns
  • Plantains
  • Kale
  • Sriracha sauce
  • Chilli flakes

Steps

Tiger Prawns

  1. Squeeze the lime juice over the prawns
  2. Season with salt and black pepper
  3. Spoon the olive oil over the prawns
  4. Gentle mix them together
  5. Cook them over piping hot grilling pan

Plantains

  1. Slice the plantain at an angle to get large surface area to medium thickness
  2. Fry the plantain in sizzling hot vegetable oil until golden brown

Kale

  1. Fry the raw kale, onion, cayenne pepper and powdered crayfish lightly

To Assemble

  1. On a serving platter paint the siracha sauce, placing the fried plantain for stacking
  2. Put fried kale over the plantain
  3. Carefully place the prawns onto the kale
  4. Sprinkle chilli flakes over the stacks
