Ingredients

Tilapia

  • 2 onions halved
  • 2 tablespoons black pepper corns
  • 2 tablespoons mustard seeds
  • 5 bay leaves
  • 3 scotch bonnet peppers
  • 4 garlic cloves
  • 4 slices of ginger
  • 2 green eyed chillies
  • 2 oranges juiced
  • 26 pints of water
  • 5 cups of water
  • 4 limes
  • 2 large Tilapia

Coconut Sauce

  • 2 grated Fresh Coconut
  • 2 yellow bell peppers
  • 2 red bell peppers
  • 2 green bell peppers
  • Fresh basil and tarragon
  • 2 tablespoons virgin olive oil
  • 1 teaspoon ginger
  • 1 teaspoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cans coconut milk

Steps

Tilapia

  1. Mix the ingredients for the brine in a large bowl
  2. Place the tilapia in the brine for 3 to 4 hours
  3. Bake in the oven for 30 to 40 minutes
  4. Pour sauce over fish to serve

Coconut Sauce

  1. Melt coconut oil in the saucepan
  2. Put in the onion, then the ginger until onions are golden brown
  3. Put in the bell peppers and the salt
  4. Add the shaved coconut as soon as bell peppers soften
  5. Pour the coconut milk over the mixture in the saucepan
  6. Add the basil and tarragon to the saucepan
