  • 1 pound of mature cheddar
  • 1 pot of Bolognese sauce
  • Aubergine [Eggplant] slices (substitute courgette, zucchini)
  • Fresh Oregano
  • Berber spice rub (paprika, cinnamon, ginger, coriander, cardamom, nutmeg, cloves, chilli)


  1. In a ramekin pour a tablespoon of Bolognese sauce
  2. Rub a slice of aubergine in the berber spice place on top of Bolognese sauce
  3. Add cheese on top of aubergine slice
  4. Repeat until ramekin is full
  5. Garnish with oregano
  6. Bake for 30 minutes at 200°C (392°F)
