Agave Whisky Lamb

  • 1 leg of lamb bone-in
  • 6 cloves of garlic halved
  • 2 sprigs rosemary
  • 10 green olives halved
  • Salt
  • Pepper
  • Olive oil
  • Half a cup of Agave nectar / peach marmalade
  • Half cup of whisky


  1. Poke holes in the lamb and insert garlic, olives and rosemary
  2. Generously season with salt and pepper
  3. Generous splash of olive oil over the lamb
  4. Wrap the lamb in tin foil and place in the fridge
  5. Put agave and whisky into a jug mix it up
  6. Serve the agave marinade as a side sauce
