Ingredients

  • Four pounds oxtail / beef shank
  • 2 pints homemade beef stock
  • 1 Scotch bonnet / habanero peppers
  • 6 sprigs fresh thyme
  • 10 red bell peppers
  • 15 tomatoes chopped
  • 2 large red onions chopped
  • 5 garlic cloves minced
  • 1 thumb length fresh ginger minced
  • Half cup sunflower oil

Steps

  1. Blend bell peppers, tomatoes, and habanero together
  2. Heat sunflower oil in pot
  3. Once oil heated, dip the onion, ginger, garlic, thyme into pot
  4. Add the blended tomato mixture cook until it is reduced to a thick gravy
  5. Add the beef stock and cooked beef simmer for 3 hours
