Ingredients

  • 2 cups ground Cassava
  • 2 pounds Salmon
  • Pinch of salt
  • Pinch of black pepper
  • 1 lemon juiced
  • 2 tablespoon coconut oil
  • 2 cups grated carrots
  • 2 cups grated cabbage
  • 3 slices red onion
  • Mayonnaise
  • Half teaspoon of whole grain mustard
  • Olive oil
  • Apple cider vinegar
  • Red cabbage

Steps

  1. Toast cassava
  2. Fry salmon until golden
  3. Place the fried salmon into cassava from the pan to coat
  4. Mix cabbage, carrots, onions and mayonnaise, drizzle of olive oil, splash of apple cider, pinch of salt and pepper, splash of lemon juice for coleslaw
  5. Use whole red cabbage leaves as base
