Ingredients
- 2 cups ground Cassava
- 2 pounds Salmon
- Pinch of salt
- Pinch of black pepper
- 1 lemon juiced
- 2 tablespoon coconut oil
- 2 cups grated carrots
- 2 cups grated cabbage
- 3 slices red onion
- Mayonnaise
- Half teaspoon of whole grain mustard
- Olive oil
- Apple cider vinegar
- Red cabbage
Steps
- Toast cassava
- Fry salmon until golden
- Place the fried salmon into cassava from the pan to coat
- Mix cabbage, carrots, onions and mayonnaise, drizzle of olive oil, splash of apple cider, pinch of salt and pepper, splash of lemon juice for coleslaw
- Use whole red cabbage leaves as base
