Paleo Copy Cat Mocha Frappuccino

Ingredients

  • Sauce:

  • 1/4 cup liquid coconut oil

  • 3 tablespoons raw cacao

  • 2 tablespoons agave

  • Frapp:

  • 1 cup ice

  • 3 teaspoons instant espresso

  • 1/2 cup canned coconut cream

  • 4 cups almond milk

  • 1 tablespoon raw cacao powder

  • 3 tablespoons agave

  • 1/2 teaspoon vanilla extract

  • Small pinch of salt

  • Optional toppings:

  • Soy whipped cream

  • Remaining chocolate drizzle

  • Mini dairy free chocolate chips

Instructions

  1. In a blender, add Frappuccino ingredients and blend until everything is combined.

  2. Make sauce by mixing liquid coconut oil, cacao and agave. Drizzle sauce along sides of a mason jar. Pour Frappuccino into mason jar and top with soy whipped cream, more sauce and mini chocolate chips. Garnish with a festive straw and serve.

- Hey guys, I'm Mickel. Welcome to Pretty Healthy. We all know that feeling when we desperately need a caffeine fix, but we also know those fancy coffee drinks are just full of processed sugar, and then that gives us a sugar crash and then we need more caffeine, and it's just a viscous cycle, but I have an option for you today that might even taste better than those coffee drinks. Do you need some caffeine? Well, let's get our caffeine together. Today, my friend Ziggy is helping us out. I need to get some caffeine in him because I need his help. Let's get jiggy, Ziggy . Let's go. I remember my first mocha frappuccino. It tasted so good, but almost immediately I felt terrible . I wanted it again, but I wanted a version that made me feel good after I drank it, so I create this paleo version. Our paleo version is sweetened with agave nectar. Agave is so cool because it has a low glycemic index. What does that mean? Well basically, that's just the number that tells you how your body converts carbohydrates to glucose, so when the number is low, it means it has less of a negative impact on your blood sugar, and it's paleo-approved, so it's perfect for this recipe. I'm about ready to blend this all up, so before we get started, check out our ingredients. For our frappuccino, we need instant espresso, coconut cream, almond milk, raw cacao, agave, vanilla extract, a pinch of salt, and coconut oil. For toppings, we have soy whipped cream and dairy-free chocolate chips. Starting with our ice. Then I have instant espresso right here. Coffee sometimes gets a bad wrap, but there's actually a lot of benefits to it. Coffee is so high in antioxidants and it actually increases how fast the neurons fire in your brain, literally making you think faster. I'm going to add a generous portion of that. You already know my favorite, raw cacao. Vanilla extract, a pinch of salt that's gonna make it taste even sweeter, our agave, almond milk, and the last thing we're adding is coconut cream. I don't know if you're familiar with it. You've probably heard of coconut milk, but coconut cream has even more of the meat from the coconut blended in with it and it has all those good fats for you in it. It's also high in electrolytes, which is great for fatigue. You can usually find this in your grocery store in the international aisle. It comes in a can usually with the Asian foods. So we're gonna add this in and it's gonna taste so thick and creamy. And then we're just gonna blend it up. Mm. I can smell that espresso, it's already waking me up. We're not quite done yet though. We're gonna have a syrup for the top of this, so I'm gonna go grab the ingredients, and in the meantime, check out my Pretty Healthy tip of the day. Today I wanted to let you know about collagen or collagen peptides. When I hear the word collagen, I think skin because this does wonders for your skin. It hydrates it, it promotes elasticity, so it keeps you looking young and fresh forever. It's also great for bone health and joint health, and you can buy it in this powder. When it says collagen peptides, basically it means it's formulated to mix into liquids really well. So you could add a spoonful of this to your smoothie, to your frappuccinos, to essentially anything. It's tasteless, odorless. You won't know it's there, but your body definitely will. Next, we're gonna make our chocolate sauce. The first ingredient is raw cacao, more of that delicious agave, and melted coconut oil. And you're just gonna mix that together. I'm going to take a spoonful of this and just drizzle it around the rim so it will fall down the inside of the glass. Then some for Ziggy's glass as well. All right, in with our beautiful creation. And a little bit for Ziggy because he was a good help. I don't know, were you a good help? And then, just to just really send this over the top, I have soy whipped cream that comes in a can. Aha! Then I'm gonna drizzle a bit more of our luscious sauce. Gonna top with some of our dairy-free chocolate chips. Take that, coffee shops! I win. And then straws. Look at how cute this one is, ah! All right, Ziggy. Here's your little one for you. Just take a sip, enjoy that. It's so beautiful and I can't wait to give it a try. How about some whipped cream in my straw? Mm. That's what I'm talkin' about! This is gonna perk me up without all those awful sugars that's gonna make me crash later. You can make this at home for so much less money, too. It's a win-win.
