- Hi guys, my name's Mikelle. Welcome to Pretty Healthy where we make recipes that you love but pretty healthy, at least healthier than you're used to. Today you are in for a treat with my triple chocolate mug cake. And the cool thing about it is is it's in a single size serving mug, so portion control's not even an issue. So you get a mug and you get a mug but then I get all the other mugs. I do need a sous chef though. Brook, you're up. This is my friend Brook. He's a good little plant friend and do you wanna taste some chocolate today? Is that even a question? Let's do it. So today we are making a triple chocolate mug cake and what's better than dessert in a mug? The thing I love about this is I struggle with portion control and this is only one portion, which is amazing. An ingredient that we're using today is one of my absolute favorites. It's raw cacao. If you don't know what that is, it's essentially the same as cocoa powder but it's completely unprocessed so no heat has ever touched this, which means all of the antioxidants are still there. It's a little more bitter than cocoa powder but I like that because it really balances out the sweetness of a dessert. Antioxidants are so important for you because it protects you from free radicals. Free radicals are the things that you find in the environment, in toxins, and in some foods that cause damage to your body over time. So this is our star ingredient and I'm gonna show you the rest of the ingredients. Our cake batter has gluten-free flour, coconut sugar, baking soda, raw cacao, coconut oil, vanilla extract, almond milk, and dairy-free dark chocolate chips. Our sauce has melted coconut oil, raw cacao and honey. So I'm gonna start by just mixing in some our dry ingredients. I have my gluten-free flour here which will not go on the cutting board please. And then for the sweetener that I'm using, I'm using coconut sugar. I love coconut sugar. It's essentially considered a Paleo sugar but the thing that makes it so great is on all of the sugars and sweeteners this is really low on the glycemic index. So I'm gonna just add that in as well. And the rest of our dry ingredients, baking soda, my favorite, raw cacao, and a little pinch of salt. I'm just gonna mix these dry ingredients real quick. Now time for our wet ingredients. Vanilla extract, melted coconut oil, almond milk. I'm gonna mix all those very carefully as not to spill. Once again make sure you really get down to the corners of the mug. And then, my favorite thing is dairy-free dark chocolate chips. I'm gonna use most of these. I wasn't kidding when I said triple chocolate. Just you wait to, there's more coming. Great, this is all combined. This is gonna be the quickest cake of your life because it goes in the microwave for literally a minute and 20 seconds, that's it. And while we wait, check out my Pretty Healthy Tip of The Day. So today's Pretty Healthy Tip we're talking about everybody's favorite guy, coconut oil. I love coconut oil. By now we know it's great for your cholesterol. Raises you HDL cholesterol, but there's a lot of beauty benefits to it too, especially topically. This is antifungal and antibacterial so it's safe to put on your skin. And one thing I love to do with it is when applied topically it actually helps prevent protein loss. So you can use this as a hair mask and it'll keep your hair strong and healthy all the way through the winter. It's a pretty, pretty, pretty healthy. It smells so good. This does have to rest for a little bit though, so I'm gonna set this aside and my sous chef finally decided to show up. What was traffic bad or something? This is actually my good friend. I give him some crap, but he is my good friend Brook. Brook's gonna help me make the sauce today. Aren't you Brook? Our sauce is super simple, it's a chocolate sauce, and there are three ingredients. Melted coconut oil. You'll never guess it, more raw cacao. And then one of my favorite sweeteners, honey. I love honey for a lot of reasons. First off honey is really sweet. Honey has more fructose than glucose as compared to other sugars, so on the tongue it's very, very sweet. In addition to that, honey is very high in B vitamins which gives you a natural energy. And if you eat local honey, since it's pollinated from the plants in your area it will help you with your allergies. It's kind of a win-win. So I'm gonna use that in our chocolate sauce as well. Gonna mix that around. We have our toppings in order now and now I just gotta decorate our little mug cake. So I'm gonna start with a coconut whipped cream here. There's soy whipped cream that comes in a can. This guy was found in the Frozen section of Whole Foods. I'm just gonna give a generous dollop on top. Maybe a dollop and a half. Then I'm gonna drizzle some of this chocolate sauce. And then I'm gonna top it with some more chocolate chips. And that's it! It's literally done! I got chocolate on my hands, which is my favorite problem. I'm gonna give this a taste test and you might get some, if you show up on time next time. I just want you to appreciate this bite before I appreciate this bite. Do you see all the different chocolates? I am so excited. I get really excited about chocolate. I'm not kidding when I say you have to give this a try. This is the least guilty you'll ever feel eating a cake for several reasons. First, it's one serving. You can't overindulge. Second, we have super foods in it like raw cacao. And third, we have healthier sweeteners and a healthier flour. So try this. Maybe share with a friend. Maybe don't. And I'll see you next time.
