
Sea Salt & Herb Flatbread with Hands Chopped Pesto

Ingredients
Flatbread
- 1 cup salted warm water
- 1 tablespoon yeast
- 1 teaspoon sugar
- 3 cups baking flour
- 1 teaspoon thyme leaves
- 1 lemon rind
Pesto
- 3 bunches basil
- 1/4 cup Parmesan cheese
- 2 garlic cloves
- 1 lemon
- 1/4 cup pine nuts
- Olive oil
- Salt
- Pepper
Steps
Flatbread
- Preheat grill.
- In a large mixing bowl, whisk together warm water, yeast and sugar until combined. Let sit out for 2 minutes until frothy.
- Add flour, thyme and lemon rind and mix well until combined, then wrap in a damp tea towel and let rise for about one hour until tripled in size.
- Transfer your dough onto a well-floured surface and knead for about 10 minutes until silky and elastic.
- Cut into 8 equal portions, then use a rolling pin to roll each into a 6-inch diameter.
- Grill until golden and top with pesto.
Pesto
- Chop all ingredients.
- Mix together then season with salt and pepper.
