Sea Salt & Herb Flatbread with Hands Chopped Pesto

Ingredients

Flatbread

  • 1 cup salted warm water
  • 1 tablespoon yeast
  • 1 teaspoon sugar
  • 3 cups baking flour
  • 1 teaspoon thyme leaves
  • 1 lemon rind

Pesto

  • 3 bunches basil
  • 1/4 cup Parmesan cheese
  • 2 garlic cloves
  • 1 lemon
  • 1/4 cup pine nuts
  • Olive oil
  • Salt
  • Pepper

Steps

Flatbread

  1. Preheat grill.
  2. In a large mixing bowl, whisk together warm water, yeast and sugar until combined. Let sit out for 2 minutes until frothy.
  3. Add flour, thyme and lemon rind and mix well until combined, then wrap in a damp tea towel and let rise for about one hour until tripled in size.
  4. Transfer your dough onto a well-floured surface and knead for about 10 minutes until silky and elastic.
  5. Cut into 8 equal portions, then use a rolling pin to roll each into a 6-inch diameter.
  6. Grill until golden and top with pesto.

Pesto

  1. Chop all ingredients.
  2. Mix together then season with salt and pepper.
