Poppable Pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted


  • Blueberries
  • Raspberries
  • Cooked bacon
  • Powdered sugar
  • Maple syrup for dipping


Poppable Pancakes

  1. Preheat oven to 400°F.
  2. In a mixing bowl, whisk flour, sugar, baking powder, baking soda and salt.
  3. In a separate large bowl, whisk together the buttermilk, eggs and melted butter. Pour the wet mixture into dry mixture. Mix until slightly lumpy. Allow batter to rest for two minutes.
  4. Prepare mini-muffin tins with nonstick cooking spray. Fill each cup about 2/3 full. Add toppings in rows: a row of blueberries, a row of raspberries, a row of bacon. Bake 10-12 minutes.
  5. Let cool, then serve with maple syrup for dipping. (You can also brush the tops with melted butter and add cinnamon sugar, or sprinkle with powdered sugar.)
