Bacon Fat Cookies with Maple Bourbon Glaze

Ingredients

Bacon Fat Cookies

  • 1/4 cup rendered and chilled bacon grease
  • 1 cup sugar
  • 1/4 cup butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 strips of bacon, fully cooked and crumbled

Maple Bourbon Glaze

  • 2 tablespoons maple syrup
  • 1 tablespoon bourbon
  • 1/2 cup powdered sugar

Steps

Bacon Fat Cookies

  1. Preheat oven to 375 degrees.
  2. In a large bowl, cream together the bacon grease, sugar and butter with an electric mixer.
  3. Carefully add dry ingredients, then add in the egg and vanilla. Mix to combine.
  4. Scoop tablespoon-sized dollops of the dough and place on a parchment-lined sheet tray. Press down slightly with your thumb.
  5. Bake for 10 to 12 minutes and set aside to cool.

Maple Bourbon Glaze

  1. In a small bowl, whisk together the maple syrup, bourbon and powdered sugar.
  2. Drizzle over cookies and top with crumbled bacon.
