Peanut Butter Magic Cake Bars

Sugar Fix - "Big on Bacon"


  • 4 eggs, separated
  • ½ tbsp tablespoon water
  • ¾ cup granulated sugar
  • ½ tsp salt
  • 1/4 cup peanut butter
  • 115g unsalted butter, melted and cooled
  • 1 cup all-purpose flour
  • 1 ¾ cups milk at room temperature
  • 1 tbsp vanilla extract
  • ¼ tsp white vinegar
  • ½ cup mini chocolate chips


  1. Preheat your oven to 325F and line an 8 inch square pan with baking paper and set aside.
  2. Add egg yolks, water, sugar and salt to a large mixing bowl and mix using an electric mixer until the mixture is light in colour and thickened. Add the peanut butter and beat until combined.
  3. Add the flour in two or three portions, beating it in well each time.
  4. Add the milk and vanilla extract. The mixture will thin out and may split. Continue beating until it comes together.
  5. In a very clean bowl with very clean beaters, beat the egg whites and the vinegar to stiff peaks.
  6. Add the whites to the yolk mixture in three separate portions using a whisk or one of the beaters from the mixer. You don't want to beat it in, just break up the whites gently while not deflating them.
  7. Pour the mixture into the prepared pan and sprinkle the chocolate chips evenly over the top. They will sink to the bottom of the pan, which is normal.
  8. Bake for 1 hour or until the top is browned and the cake is jiggly but not sloshy. Let the cake cool completely.
  9. Carefully take it out of the pan and use a large knife to cut up.
