Preheat oven to 350 degrees. Spray the mini doughnut pan with nonstick spray.
In a large bowl, whisk the melted butter, sugars, egg and vanilla until smooth.
In a separate bowl, combine the flour, baking soda and salt.
Stir the dry ingredients into the wet ingredients. Fold in the chocolate chips.
Fill each cavity of the mini doughnut pan with chocolate chip dough and bake for 12 minutes. Remove and let cool.
In a double boiler, melt chocolate and coconut oil together.
Place about 2 tablespoons of softened vanilla ice cream on top of half of the cookie doughnuts. Top each with another cookie. Dip top cookie into melted chocolate and sprinkle with sea salt. Freeze to set.
