- Freshly squeezed juice of 6 limes
- 2 tablespoons butter
- 2 eggs
- 1 cup sugar
- 2 cups heavy cream
- Lime zest of 2 limes
- In a double boiler, combine the juice, butter, eggs, and sugar. Stir until mixture thickens. Set aside to cool.
- In a bowl, beat the whipping cream until soft peaks form. Add the lime juice mixture and lime zest.
- Pour into a container and place in freezer for 6 hours.
- Remove from freezer, scoop, and enjoy!
