Chocolate, bacon and beer brownies, huh? My lucky day!
75g plain flour
300g castor sugar
1 (185g) cup dark choc chips
200g bacon strips
1 cup brown sugar
200g dark chocolate, chopped
150ml chocolate stout
Add the chocolate and stout into a large microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth. Set aside to set at room temperature.
Preheat a fan forced oven to 175C (340F). Spray an 8” by 8” square pan with non stick cooking spray and line with baking paper. Set aside.
Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined. Add the choc chips and fold in
Slowly add chocolate and butter mixture while mixing on low speed.
Add batter to baking tin lined with baking paper. Bake for 30 min or until a pick comes out with moist crumbs.
Preheat an oven to 200C. Line a baking tray with foil wrap and then with baking paper.
Lay out the strips of bacon next to each other and add 1-2 tbsp of brown sugar on top of the bacon. Use a spoon to spread the sugar on the bacon.
Bake for 10-15 minutes or until the edges of the bacon turn a dark brown (not burned). Take out of the oven and allow to cool before cutting into large wedges.
To finish the brownies, add the set ganache on top of the brownies and spread around using an offset spatula. Add candied bacon on top before serving.
