Ice Cream Birthday Cake

Ingredients

  • Strawberry Ice Cream

  • 600ml whipping cream

  • ½ cup sweetened condensed milk

  • 1 tsp strawberry flavouring

  • 3 drops pink food gel

  • 1 tsp vanilla extract

  • 1 cup rainbow confetti sprinkles

  • Boysenberry Ice Cream

  • 600ml whipping cream

  • ½ cup sweetened condensed milk

  • 1 tsp boysenberry flavouring

  • 3 drops blue food gel

  • 1 tsp vanilla extract

  • 1 cup rainbow confetti sprinkles

  • Lemon Ice Cream

  • 600ml whipping cream

  • ½ cup sweetened condensed milk

  • 1 tsp lemon flavouring

  • 3 drops yellow food gel

  • 1 tsp vanilla extract

  • 1 cup rainbow confetti sprinkles

  • Decorations

  • 200ml whipping cream

  • 1 tsp vanilla extract

  • 180ml chocolate sauce

  • ½ cup rainbow confetti sprinkles

Instructions

  1. To prepare the cake tin for the layered ice cream cake, lightly spray the bottom of a 7” cake tin with oil spray and line with baking paper. Use a sheet of acetate and line the inside of the cake tin with it. You want a piece that’s about 8 inches high. Once in the cake tin, tape each end together and set aside.

  2. Making the ice cream cake is easy. Each layer is made the same way. Begin by adding the cream, sweetened condensed milk and vanilla extract to three separate bowls. To make the lemon ice cream, add the lemon flavouring and yellow food gel. To make the boysenberry ice cream add the boysenberry flavouring and blue food gel. To make the strawberry ice cream add the strawberry flavouring and pink food gel. Use a hand mixer to whisk each one to stiff peaks.

  3. Add the confetti sprinkles and gently fold in using a spatula.

  4. Use a spatula to add each layer of cream in the prepared cake tin. Firmly tap the cake tin against your work bench with the addition of each layer.

  5. Place in the freezer overnight.

  6. Take the frozen ice cream out of the cake tin and place on a cake stand or serving platter. Drizzle chocolate sauce around the top of the cake and allow to drizzle over the sides.

  7. To prepare the whipped cream add the cream and vanilla into a large mixing bowl and whip to stiff peaks.

  8. Fit the end of a piping bag with a Wilton 1M piping tip and frost a swirl of cream around the top of the cake. Sprinkle with more sprinkles to finish.
