3 no-bake mini cheesecakes for when you need a quick-fix dessert!

No-Bake Mini Cheescakes

Ingredients

  • Cheesecake Base

  • 750g (26oz) Philadelphia cream cheese, room temperature

  • 250ml (1 cup) sweetened condensed milk

  • 2 tsp vanilla extract

  • 300ml (1 ½ cups) thickened/whipping cream

  • Nutella Flavour

  • 50g Oreos

  • ¼ cup unsalted butter, melted

  • 180g (2/3 cup) Nutella + extra to drizzle

  • ½ cup toasted hazelnuts, crushed

  • Raspberry Cheesecake

  • 50g graham crackers

  • ¼ cup unsalted butter, melted

  • 180g (2/3 cup) Raspberry jam

  • 1 cup fresh raspberries

  • Mint to garnish

  • Caramel Biscoff Cheesecake

  • 50g biscoff biscuits

  • ¼ cup unsalted butter, melted

  • 300g (1 ½ cups) caramel filling or sauce

  • Whipped Cream

  • 100ml thickened/whipping cream

  • 1 tsp vanilla extract

  • 90ml ¼ cup sweetened condensed milk

Instructions

  1. Cheesecake Base

  2. Begin by adding the cream cheese and sweetened condensed milk into a food processor. Process until smooth. Add the vanilla extract and cream and process until smooth.

  3. Split the mixture into 3 separate bowls.

  4. Add the caramel sauce into one. Mix using a spoon until well combined. Add the Nutella to the second bowl and the raspberry jam to the third. Mix both until well combined. Set aside.

  5. Whipped Cream

  6. Add all ingredients into a large mixing bowl. Use electric beaters to whip to stiff peaks. Add into a large piping bag fitted with an open star tip and set aside.

  7. Bases

  8. Making the cookie bases is easy. Each one is basically made the same way. Add each biscuits (separately) to a food processor and process until it reaches a crumb mixture. Then add the melted butter and pulse to coat the crumbs.

  9. To put the caramel cheesecake together, drizzle caramel on the inside of 2 serving cups. Split the biscoff crumb into both serving cups. Add the caramel cheesecake into a piping bag fitted with an open star tip and pipe into the serving cups. Pipe whipped cream on top and drizzle with extract caramel.

  10. To make the Nutella cheesecake split the Oreo crumb into two serving cups. Add the Nutella cheesecake into a piping bag fitted with an open star tip and pipe into the serving cups. Pipe whipped cream on top, drizzle with extract Nutella and sprinkle toasted hazelnuts on top.

  11. To make the Raspberry cheesecake split the graham cracker crumb into two serving cups. Add the raspberry cheesecake into a piping bag fitted with an open star tip and pipe into the serving cups. Pipe whipped cream on top. Top with 3 fresh raspberries and a mint leaf before serving.
