This strawberry and kiwi-topped fruit pizza is cleverly disguised as a watermelon for a sweet treat.
400g unbleached all-purpose flour
1 ½ tsp baking soda
½ tsp. salt
250g unsalted butter, at room temperature
180g granulated sugar
2 large eggs
1 tsp. strawberry essence
470 g dark chocolate chips + extra choc chips to sprinkle at the end
220g packed brown sugar
250g cream cheese (room temp)
½ cup sweetened condensed milk
1 tsp vanilla (optional)
2 kiwi fruit
500g fresh strawberries
Spray a 24cm pizza tray with cooking oil and line with baking paper. Set aside. Preheat an oven to 180C.
In a bowl, sift together the flour, baking soda and salt. Beat the butter, brown sugar and granulated sugar until smooth, about 2 minutes. Add the egg and strawberry essence, water and mix on low speed until blended.
Slowly add the flour mixture and mix just until incorporated. Stir in the chocolate chips.
Chill for 20 min and then using either the palm of your hand or the end of a flat glass, press down cookie dough onto the pizza tin making sure it’s all flat and even. Using another piece of baking paper on top of the dough makes this an easy process.
Bake for 20 min or until golden brown. Allow to cool.
To prepare cheesecake spread combine all ingredients in a large mixing bowl using a hand mixer or spatula. Set aside.
To prepare fruit peel kiwi fruit. Slice in half long ways and then slice again as demonstrated. Clean, dry and cube strawberries.
To assemble spread cheesecake in a thin layer over cookie. Going right to the edge. Place strawberries on the cookie but not right to the edge. Carefully place kiwi fruit around the outside and finish off with a sprinkle of choc chips as the watermelon seeds!
