Kvass

Though not as trendy as Kombucha, this traditional Russian fermented beverage has been served throughout Eastern Europe since the Middle ages.

Ingredients

  • 1 tablespoon Dry Yeast
  • 1 1/2 Cup Raisins
  • 1 1/2 Cup Sugar
  • 5 Slices Dark Rye Bread, Toasted

Steps

  1. Bring 1 1/4 gallons of water to a boil. Turn off heat, and add your bread and raisins. Let the mixture steep for 8 hours.
  2. After steeping, remove your bread and add sugar and yeast. Let this mixture sit for another 6-8 hours while fermentation takes place.
  3. Strain the fermented mixture, and pour into bottles. Let the bottles cool in the fridge for 2-3 hours, then serve and enjoy!
