Tiny Creme Brulee

When you want a little bit of something fancy and delicious, this itty bitty dish delivers.


  • 1 tablespoon cream
  • 1/8 teaspoon vanilla
  • 1 quail egg yoke
  • 1 teaspoon sugar
  • Superfine sugar


  1. Simmer cream and vanilla. Whip egg yolk with sugar until pale. Slowly add cream to egg mixture and stir to combine.
  2. Pour into a ramekin and bake at 375°F for 5 minutes. Chill.
  3. Sprinkle with sugar, then torch to caramelize.
