Tiny Creme Brûlée

Ingredients

  • 1 tablespoon cream
  • 1/8 teaspoon vanilla
  • 1 quail egg yoke
  • 1 teaspoon sugar
  • Superfine sugar

Steps

  • Simmer cream and vanilla. Whip egg yolk with sugar until pale. Slowly add cream to egg mixture and stir to combine.
  • Pour into a ramekin and bake at 375°F for 5 minutes. Chill.
  • Sprinkle with sugar, then torch to caramelize.
