Tiny Eggplant Parm

A little fried eggplant topped with cheese is a dish aimed to please.


  • 1 teaspoon oil
  • 1/2 inch round slice of eggplant
  • 1 teaspoon egg, whisked
  • 1 teaspoon bread crumbs
  • 1/2 inch round slice of mozzarella cheese
  • 1 tablespoon marinara sauce
  • Basil for garnish


  1. Dip eggplant in egg and then breadcrumbs. Heat oil in pan and fry eggplant, flip and top with cheese. Add marinara to pan and cook until heated and cheese is melted. Top with basil and serve!
