• 1 tablespoon water, divided
  • 1/2 teaspoon sugar
  • 1/2 teaspoon butterfly pea flowers
  • 1 teaspoon fresh squeezed lemon juice


  1. In a saucepan, add half the water and butterfly pea flowers and bring to a simmer.
  2. Allow to steep for 10 minutes.
  3. Combine remaining water and lemon juice. Strain the pea flower water and stir in sugar, add to a pitcher, pour lemon water over the top.
  4. Watch the color begin to change and then stir to combine.
