- 1 tablespoon water, divided
- 1/2 teaspoon sugar
- 1/2 teaspoon butterfly pea flowers
- 1 teaspoon fresh squeezed lemon juice
- In a saucepan, add half the water and butterfly pea flowers and bring to a simmer.
- Allow to steep for 10 minutes.
- Combine remaining water and lemon juice. Strain the pea flower water and stir in sugar, add to a pitcher, pour lemon water over the top.
- Watch the color begin to change and then stir to combine.
