Ingredients

Tiny Chicken Cordon Bleu

  • 1 tiny chicken breasts
  • 2 tiny slices ham
  • 2 tiny slices provolone
  • 2 teaspoons flour
  • 1/2 quail egg, beaten
  • 2 teaspoons breadcrumbs
  • 1 teaspoon vegetable oil

Sauce

  • 1 teaspoon flour
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1 tablespoon half-and-half
  • 1/4 teaspoon Dijon
  • Salt and pepper
  • Parsley, for garnish

Steps

Tiny Chicken Cordon Bleu

  1. Make a slice in the side of the chicken breast to form a pocket. Place the cheese and ham inside. Dip the chicken in flour, then egg, then breadcrumbs.
  2. Heat oil in a saute pan and cook chicken until brown on both sides. Remove and set aside.

Sauce

  1. Add flour to pan and cook 2 minutes. Stir in garlic and onion powder. Whisk in the half-and-half and Dijon. Pour over chicken and garnish with parsley.
