Ingredients

Steak

  • 3 very thin slices of steak
  • 3 very thin slices bell pepper
  • 3 very thin slices onion
  • 1 teaspoon fajita seasoning
  • 3 toothpicks soaked in water
  • 1 1/2 teaspoons vegetable oil

Rice

  • 1 tiny onion, chopped
  • 1 grape tomato, chopped
  • Salt and pepper
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon tomato sauce
  • 1 tablespoon rice, cooked
  • 1 teaspoon chopped parsley

Serving

  • Corn tortillas
  • Salsa
  • Guacamole

Steps

Steak

  1. Lay steak pieces on a work surface. Place 1 pepper slice and one onion slice in the center of each and roll up. Secure with a toothpick. Sprinkle with salt, pepper and fajita seasoning.
  2. Heat the oil in a saute pan. Cook the roll-ups until browned on all sides. Remove from pan and serve with rice, tortillas, guacamole and salsa.

Rice

  1. In a saucepan, add oil and saute the onion. Add cumin, chopped tomato, salt, pepper and chili powder. Stir and add tomato sauce, rice and parsley. Stir to combine then set aside.
