These may be the cutest savory potato dumplings ever.
2 tablespoons mashed potato
1 tablespoon flour
1/4 of whisked quail egg
2 teaspoons butter
1 sage leaf, chopped
Cook and mash the potato. Mix the potato and flour; stir in egg. Kneed dough for 2 minutes, roll into a long, thin rope and cut into 1/8-inch pieces. Add pieces to boiling water and cook for 2 minutes; strain. Add butter to sauté pan and cook until golden brown; stir in sage. Pour butter over gnocchi.
