Japanese fare with California soul. Mudo signifies "state of feeling" or "the pervading atmosphere of a given place." Chef Trevor Molyneux has spent time in some of San Francisco's top restaurants including Akikos, Michael Mina, Ame, and Ju-Ni. He is a former Sous Chef of Michelin starred Ame where he mixed styles of Japanese, California and French cuisine. Salted cucumbers, spanish mackerel sashimi, warm broth with noodles and a braised short rib, Chef Trevor creates a coursed out experience of Japanese flavors with the rich bounty of California produce. Items are shopped for week of event to maximize best possible sourcing.
