Le Dessert / Pavlova
Pavlova is to me the best way to finish a dinner. It is perfectly light and airy. A meringue based cake with a vanilla whipped cream (real vanilla beans from Madagascar) and topped with fresh berries...
L'entrée / the Starter
Small Plate
Beets, citrus and Goat cheese salad. sesame seeds, argan oil.
Le Poisson / the Fish
Wild fresh ling cod (or freshest fish from the Fish market) with quinoa, fresh asparagus and the absolute beurre blanc sauce. For the 2 vegetarians : I could substitute fish by sous vide eggs and avocado. The fish will be served with a glass of Sancerre.
La Viande / the Meat
That dish is not traditional French but it comes from my mom's kitchen and has a very special place in my heart. It is a curry lamb stew with a touch of coconut milk and many spices. For the vegetarian : I can do a fresh heirloom tomatoes and mozzarella di bufala salad. Delicious... The dish will be served with a glass of red Sancerre.
L'aperitif / Buckwheat blinis & smoked salmon
Gluten free buckwheat blinis, topped with smoked salmon, sour cream and dill.
Wine pairing
The pairing will be around the prestigious Sancerre region, France, in white, red and rosé.
