This menu is the culmination of my journey as a chef. It features dishes and ingredients that have come to exemplify American cuisine in my opinion. These are dishes in my repertoire that have evolved as my understanding and opinions have changed around American food. This menu will feature straight forward presentations of dishes that are staple to American cuisine and emblematic of California and the northwest. Featuring locally sourced ingredients that showcase the bounty of our region.

Roast Beet and Tombo Tuna Salad
Locally sourced beets, roasted and compressed with accentuating vinegars, herbaceous poached loin of Albacore Tuna, Locally sourced mixed greens, shallots glazed in Napa county white wine, butter and herb croutons and crème fraîche vinaigrette made with clover dairy creme and California olive oil.
Pan roasted Mushrooms
Small Plate
Locally sourced king oyster and button mushrooms scored and pan roasted in butter and herbs. served with a parsley and garlic salsa verde, fried shallots, and Hawaiian black sea salt.
Bistro style Denver Steak and Frites
Featuring a Marin Sun Farms Denver steak cooked sous vide with butter and herbs and then seared, sliced, and served medium with a pat of porcini compound butter. Paired with confit Russian fingerling potatoes that are deep fried and served with a side of herb aioli.
Tea and Cookies
Honey and lemon Pannacotta with a Chai tea Gastrique made with chai tea from T-We tea SF., Nilla wafer crumble, Mint.
