Quinoa & Greens Buddha Bowl

Ingredients

  • 1 cup quinoa, cooked
  • 4 cups mixed baby greens
  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup grape tomatoes, halved
  • 1/2 cucumber, diced
  • 2 tablespoon hummus
  • 1 tablespoon hemp hearts

Steps

  1. In a 1 quart-sized mason jar, add the cooked quinoa, cucumber, chickpeas, tomato, hummus, hemp hearts, and then fill the rest of the space with the mixed baby greens.
  2. Seal tightly and refrigerate for up to 4 days.
