Easy Chicken Chili


  • 2 tbsp olive oil
  • ½ large onion, minced
  • 1 stalk celery, minced
  • ½ carrot, minced
  • 1 clove garlic, minced
  • 1lb ground chicken
  • 2 cups canned red kidney beans, drained
  • 26 oz can crushed tomatoes
  • 3 tsp chili powder
  • 1 tsp red pepper flakes
  • Sour cream
  • grated cheddar cheese
  • bread rolls


  1. Place the olive oil, onion, celery and carrot into a large pot and set to medium heat. Cook until the onions become translucent.
  2. Add the garlic and ground chicken and cook until the chicken is browned on the surface. Add the kidney beans, crushed tomatoes, chili powder and red pepper flakes and mix well.
  3. Cook until the chicken is cooked through and the chili is bubbling.
  4. Serve with a dollop of sour cream and cheddar cheese and use bread rolls for dipping!
