Ingredients
- 1 pound chickpeas, cooked
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 onion, chopped
- 4 tablespoons parsley
- 1 teaspoon mint
- 1/2 teaspoon cumin powder
- Salt
- 3 tablespoons wheat flour
- 1 teaspoon baking powder
Steps
- Preheat oven to 350 degrees.
- In a food processor, add the chickpeas and process until a paste forms.
- Add the olive oil and process for 2 minutes.
- Add the garlic, onion, parsley, mint, cumin and salt, and process for another 2 minutes.
- Spoon the mixture into a bowl and refrigerate for 20 minutes.
- Mix in the flour and baking powder.
- Scoop spoonfuls of batter and shape into falafels. Place on a greased baking sheet.
- Bake for 20 minutes.
Ingredients

- 1 pinch paprika
- 1 1/2 pounds chicken breasts, cut into strips
- Wheat flour, for breading
- 2 beaten eggs, for breading
- Cornflakes, crushed
- 1/2 cup chopped parsley
Steps
- Preheat oven to 390 degrees.
- Add minced garlic, salt and paprika to a mortar and pestle and blend until a paste forms.
- Place chicken strips in a mixing bowl and add garlic paste. Stir until chicken is well coated.
- In a shallow dish, add the flour. In a separate shallow dish, add beaten eggs. In a third dish, add the cornflakes mixed with parsley.
- Dredge the chicken strips in the flour, then egg, then cornflakes.
- Place on a greased baking pan, and bake for 30 minutes. Serve with ketchup.

- 2 pounds pink potatoes, peeled
- 4 cups ice water
- 1 cup white vinegar
- 1/2 cup olive oil
- Salt and pepper, to taste
Steps
- Preheat oven to 390 degrees.
- Cut potatoes into wedge fries. Place in a large mixing bowl and add water and vinegar. Allow to soak for 15 minutes.
- Transfer to a baking sheet and pat dry.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 15 minutes. Serve with ketchup.
