• 2 pounds pink potatoes, peeled
  • 4 cups ice water
  • 1 cup white vinegar
  • 1/2 cup olive oil
  • Salt and pepper, to taste


  1. Preheat oven to 390 degrees.
  2. Cut potatoes into wedge fries. Place in a large mixing bowl and add water and vinegar. Allow to soak for 15 minutes.
  3. Transfer to a baking sheet and pat dry.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake for 15 minutes. Serve with ketchup.
